Here is a recipe from Autumn Calabrese’s Fixate cookbook. If you don’t know Autumn Calabrese is the trainer who created the 21 Day Fix program, with a fantastic meal plan & workout !
2 tsp Prepared Pesto Sauce
2 thick slices from a large tomato
4 large fresh basil leaves
1 slice fresh mozzarella
1 dash of sea salt
1 dash ground black pepper
4 tsp balsamic vinegar
1. Spread 1 tsp of pesto sauce on serving plate in circular motion. Top with 1 tomato slice, 2 basil leaves and mozzarella.
2. Spread remaining 1 tsp pesto sauce on mozzarella slice; top wit remaining tomato slice and remains basil leaves. Season with salt and pepper.
3. Drizzle with balsamic vinegar ; serve immediately
